Phillips Foods Inc.: The History
The company was founded in 1914 by Augustus E. Phillips when he started his business of blue crab meat for his family. The company was primitively established at Hooper’s Island in Maryland Chesapeake Bay and their business began to flourish.
The blue crabs were found abundantly on the Atlantic coasts which served their business of crab meat processing and packaging. The company witnessed its first peak of success during the supervision of Shirley and Brice Phillips, who belonged to the second generation of AE Phillips.
But it was during the late 1990s when the restaurant experienced a little setback due to the shortage of supply of crab meat. This was so because initially the company processed crab meat for itself and the owners knew that the supply would not be enough for the future.
It was at this moment that the company started importing crab meat from countries of Indonesia, Thailand, East Malaysia, and the Philippines. Afterward, the company expanded itself into seven more plants in different countries namely, Vietnam, Thailand, Baltimore, the Philippines, Indonesia, East Malaysia, Ecuador, and India.
Manufacturing and Shipping Process:
Phillips exercises a simple process of manufacture for its crab meat that first needs to be extracted and then shipped. Here are the steps in which they manufacture and ship their crab meat:
Step1. There are several fishermen in contact with the company who is responsible for the supply of crabs to them. Those crabs are bought by the company as the first step.
Step2. Those crabs are transferred to the processing plants owned by the company.
Step3. Now the plants have a specific cooking process for the crabs. The crabs are cooked there so that the meat can be easily extracted.
Step4. The extracted crab meat is placed in plastic or metal vessels for pasteurization which facilitates in increasing its shelf life by up to a year.
Step5. Then the pasteurized meat is filled into the shipping vessels and the temperatures are set to 38°F.
Step6. Now the crab meat is ready to be shipped to the Port of Baltimore, to the manufacturing plants, or to other parts of the country as packaged crab meat.
